Delphinidin, Cy-3-rut, dp-3-rut, cy-3-glu, Dp-3-glu are the main parts of the black currant color.We can see purple liquid or powder with our naked eyes. It is easily water-soluble and absolute a natural pigment .It is abstracted from the fruit residues of Saxifragaceae ground cherry black currant(also named Ribes nigrum) by modern biotechnology.Widely used in soda,fruit wines, frothy wine-cup,black currant wines, carbonated beverage,etc.Also used in jam, frozen sucker,ice cream,cakes as purple coloring.
